The Canon PIXMA mail-in rebates have been renewed — here is the new rebate form. The new rebate ends on January 2nd, 2016.
The new rebate form has a new promotion id, which means that even if you bought a printer in the previous rebate period (November 1st to November 28th), you can purchase another printer now and receive a mail-in rebate. There are several bundle deals still live at authorized Canon USA dealers.

I think it’s unfair that B&H and Adorama jacked the kit prices up instead of extending the Black Friday offers into CyberMonday, even though Canon extended the $350 mail-in rebate offer on the Pixma printer. Now the B&H kit price after the mail-in rebate is $2,670.87 instead of $2,149 ($521.87 more). Cyber Monday sucks compared to Black Friday.
The underlying price is at the discretion of the retailer. There is probably some prevailing circumstance that enabled them to have that deal last week and it likely ended last night at midnight.
Generally, you should buy whenever you see an item at the price you want to pay, especially given the generous holiday return policies that will let you price adjust if the price lowers further in the season.
